Grapes:
100% Assyrtiko
Colour:
Light green lemon.
Aroma:
Citrus with an emphasis on lemon, grapefruit and orange peel, followed by notes of peach and pear and at the end come some notes of mineral and tea.
Ageing:
Classic white vinification. 20% aged for 6 months in 2nd and 3rd use French oak barrels of 500 l with periodic battonage.
Food Pairing:
Fatty fish, oysters, grilled sea food, poultry, pork and smoked cheeses and lamb in vine leaves. Also delicacies like Santorini fava beans, fresh cheese and tomato.

One of Greece's top white varieties, Assyrtiko is best-known as the flagship grape of Santorini, producing crisp white wines. It has developed a reputation as being a versatile grape variety. Wines are made in a multitude of styles, from fresh, minerally white wines to rich, nutty dessert wines .
Santorini island's warm, dry climate means that vine yields are universally low. The island's vineyards give small harvests of high-quality grapes with naturally high levels of sugars and acidity. Another significant advantage of the dry, sandy soils is that they are almost entirely free of phylloxera insects, which cannot live in fine-grained, loose-structured soils.
