Pinot Blanc is a versatile white-wine grape variety used in the production of still, sparkling and sweet dessert wines. The variety is often regarded as Chardonnay's understudy as it has a similar medium to full-bodied style of wine with good acidity, and responds well to oak maturation. Auxerrois (or Pinot Auxerrois) is a white wine grape variety used in the sparkling wines of Crémant, where it is typically blended with Pinot Blanc. As a wine, Auxerrois is more full bodied and less crisp than Pinot Blanc, but the two varieties complement each other perfectly.
