Hints of red fruits and white flowers.
Taste:
Perfect correspondence between the sense of smell and taste, with red fruit prevailing on the palate. The perlage is noticeable on the palate in a decisive yet refined manner.
Vinification:
Separate vinification with soft pressing of the grapes, static settling, and fermentation at 18°C using selected yeasts for Glera, and red maceration for Pinot Noir. The blending of the wines for the rosé base occurs prior to the second fermentation in autoclave using the Martinotti method for 70 days.
Food pairing:
Ideal as an aperitif. It shines when paired with all kinds of raw seafood and fish-based starters, and its refined and bold character also perfectly accompanies both mild and aged cheeses.
