Description

Pinot Noir and Chardonnay

Colour:
Brilliant golden yellow.

Aroma:
Long ageing on the lees make this sparkling wine particular rich in mineral scents, with notes of fig, dried fruits and breadcrust.

Ageing:
Whole grapes are gently pressed and then vinified in steel tanks entierly off skins. In the spring followimg the harvest, after briefly aeging a portion of the wine in Allier oak barrels, the wine is bottled for refermentation and then stacked and aged for 120 months.

Food pairing:
Excellent as an aperitif, this is a highly versatile wine that can be paired with all kinds of dishes.
