The essence of Pinot Noir wine is its aroma of red berries and cherry (fresh red cherries in lighter wines and stewed black cherries in weightier examples). Many of the more complex examples show hints of forest floor. Well built Pinot Noirs, particularly from warmer harvests, suggest leather and violets, sometimes recalling Syrah. There are two theories regarding the Pinot name. One is that it came about because their bunches are similar in shape to a pine cone (pinot in French). It may derive, however, from a place name in France such as Pinos or Pignols from where cuttings were obtained. Pignols in the Auvergne, for example, has cultivated Pinot since the middle ages.

Merlot

is a red wine grape variety with strong historic ties to Bordeaux and the southwest of France. It is the predominant variety in most wines from Saint-Émilion and Pomerol, the area in which the variety originated. Merlot is now widely planted in wine regions across the world and, in terms of the volumes of wine produced internationally, it is rivaled only by its Bordeaux companion, Cabernet Sauvignon.

Merlot is an early maturing grape variety and can ripen fully even in slightly cooler climates. This reliable ripening is a main factor behind its increased presence over recent decades in the Médoc and (mostly replacing white varieties) Entre-Deux-Mers areas of Bordeaux. Its key drawback is that the early-developing flowers are more susceptible to frost damage in spring.

In France, Merlot is the most widely planted red wine variety of all, and it is also extremely popular in northern Italy and the warmer areas of southern Switzerland. The popularity of Merlot in the United States resulted in a significant increase in planting in the late 1980s and early 1990s, particularly in California and Washington on the country's west coast. However, while Merlot-based wines were the height of fashion then, popularity has since dropped significantly in favor of Cabernet Sauvignon, Zinfandel, and Pinot Noir in particular.

Chile, a country which has long been known as a source of good-value wine, has built its reputation mainly on its Merlot-based cuvées. The country has made good use of Merlot in both the high-production wines and some of its finer wines, particularly those from Apalta and the wider Colchagua Valley.

The precise flavors that Merlot imparts to a wine are not easily grouped. Plum and black cherry are among the most common fruit-based descriptors used, though it is often used for producing wines of a particular texture, rather than a particular taste.

Smooth, rounded and "easy drinking" are common descriptions of Merlot wines. The main reason for this is that Merlot grapes are relatively large in relation to their pips and the thickness of the skins, in which tannins are found. For this reason, the variety is used to soften wines made from more tannic varieties. Chief among these is Cabernet Sauvignon, Merlot's main blending partner in the Médoc and in wine regions around the world (see Cabernet – Merlot for more information on this blend). Other southwest French varieties like Tannat (in Cotes de Gascogne) and Malbec (in Cahors) and the less common Petit Verdot benefit from Merlot's calming presence. In Tuscany it can be combined with the more angular Sangiovese.

Merlot is often dismissed as a reliable blending variety. It is often used to great effect in this capacity, and is responsible (alongside Cabernet Sauvignon) for some of the most famous wines in the world. However, it is also widely used to make varietal wines at all quality tiers, mostly in the New World. The most famous varietal Merlot wine is undoubtedly Petrus from the Pomerol region of Bordeaux – a highly collectable wine that can fetch several thousand dollars, depending on its vintage.

Investigations into the genetics of Merlot suggest that it is closely related to Cabernet Franc and Cabernet Sauvignon, its Bordeaux blending partners. Carmenère, a historic member of the extended Bordeaux family is also a close relative, and has been mistaken as Merlot for many years in the vineyards of Chile. Worthy of mention here is "Caberlot", reportedly a crossing of Merlot and another variety (possibly one of the Cabernets, hence the name), discovered by Italian agronomist Remigio Bordini. This almost mythical grape variety exists only in a small vineyard in Tuscany, where it is used to make Il Carniscale's varietally labeled Il Caberlot wine.

Cabernet Sauvignon

 is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood. DNA profiling carried out in California in 1997 confirmed that Cabernet Sauvignon is the product of a natural genetic crossing between key Bordeaux grape varieties Cabernet Franc and Sauvignon Blanc. Most wine authorities agree that this crossing happened only within the past few centuries, making the variety's global fame and dominance all the more impressive. There are two key reasons for Cabernet Sauvignon's rise to dominance. The most simple and primordial of these is that its vines are highly adaptable to different soil types and climates; it is grown at latitudes as disparate as 50°N (Okanagan in Canada) and 20°S (northern Argentina), and in soils as different as the Pessac-Leognan gravels and the iron-rich terra rossa of Coonawarra. Secondary to this, but just as important, is that despite the diversity of terroirs in which the vine is grown, Cabernet Sauvignon wines retain an inimitable "Cab" character, nuanced with hints of provenance in the best-made examples. There is just a single reason, however, for the durability of the variety's fame and that is simple economics; the familiarity and marketability of the Cabernet Sauvignon name has an irresistible lure to wine companies looking for a reliable return on their investment. As a late-flowering and late-ripening variety, Cabernet Sauvignon grapes mature slowly. This can also work for or against wine quality; in a cold season or climate there is a risk of the grapes failing to ripen fully, while in most other conditions the steady rate of progress offers producers a wider choice of harvest dates.

The origins of winegrowing in Thrace (modern day Bulgaria) date back so far in time that its roots are mythological: indeed, the cult of Dionysus (Bacchus for the Romans), the god of wine, ecstasy and freedom of the senses, originated in Thrace and was subsequently adopted in the Greek pantheon. Wine was therefore a central element in the life of Thracians, a sort of divine drink through which they could reach ecstasy and communicate with the Divine. They drank wine before going into war, to dance, to find inspiration, and to enjoy freedom.

Elenovo – a fertile soil

The vineyards are located on the slope heading down to the village of Elenovo. The physical and chemical composition of the soil, the soil layers, the microclimate that is created between the hilly area located more than 400 meters above the sea level on Saint Ilia hill, give the area all necessary for the production of high-quality wines. The planting of the vineyards began in 2002, choosing as the first variety the Pinot Nero. Over the next two years follow the other international varieties such as Chardonnay, Traminer, Sauvignon Blanc, Muscat, Merlot, Sirah, Cabernet Franc and Cabernet Sauvignon. In the spring of 2005 Edoardo Miroglio winery expanded with the Bulgarian varieties Mavrud and Melnik. In 2008, the range of local varieties further expands with Bouquet and Rubin. The average spring and autumn temperatures are low and are characterized by big temperature differences. The average quantity of rainfall favors the cultivation of the vineyards. Summers are warm, but not muggy and with low humidity.
