Here, in the most vibrant variety of the Mediterranean area, Santorini Assyrtiko as well as Aidani, Athiri, Mandilaria and Mavrotragano are cared as well as possible and with the appropriate respect for their organoleptic characteristics, in order to produce quality wines that receive appreciation in international competitions both in Greece and abroad.

Santorini island's warm, dry climate means that vine yields are universally low. The island's vineyards give small harvests of high-quality grapes with naturally high levels of sugars and acidity. Another significant advantage of the dry, sandy soils is that they are almost entirely free of phylloxera insects, which cannot live in fine-grained, loose-structured soils.
