Aroma:
The distinctive aroma of apricot and honey, a characteristic of the Semillon variety, blends perfectly with the citrus and lemon notes of the Assyrtiko variety.

Ageing:
Oak wood barrels for 8 months.

Type of Grape
Semillon

Sémillon, which is relatively easy to cultivate, consistently produces six to eight tons of grapes per acre from its vigorous vines.It is fairly resistant to disease, except for rot. The grape ripens early, when, in warmer climates, it acquires a pinkish hue. Since the grape has a thin skin, there is also a risk of sunburn in hotter climates; it is best suited to areas with sunny days and cool nights.

Assyrtiko

is a white Greek wine grape indigenous to the island of Santorini. Assyrtiko is widely planted in the arid volcanic-ash-rich soil of Santorini and other Aegean islands, such as Paros. It is also found on other scattered regions of Greece such as Chalkidiki. Assyrtiko is also being grown in Clare Valley, South Australia, and at the Abbey of New Clairvaux in Northern California since 2011.

Ktima Biblia Chora, is located in the village of Kokkinochori, Kavala, in Northern Greece. It was established by the oenologists Vassilis Tsaktsarlis and Vangelis Gerovassiliou who planted the first organic vineyard of the estate in the foothills of the Mt Pangeon, in 1998. Today, the 57-hectare privately owned vineyard, surrounds the modern winery, where all the wines of the estate produced.
